Friulan coppa is produced only with Italian pigs. Expert butchers carefully select the neck cut, only among the heavier animals. The processing is still the old one that can be found in the notes of Agostino.

The two salting processes are exclusively done by hand, the first after slaughtering and the second after 7 days, massaging the meat every 2 days to let the spices penetrate. Only the last night is given the aromatic touch. Already after the first taste, an explosion of flavors remind us of the now forgotten tastes.

When we met Stefano and his father Agostino we had been pleasantly impressed by professionalism they put in the meat processing, the passion they put in the their work, the transparency and more over by their passion. The choice of working the meat of the pigs bred at 20km from the production facility just after the slaughtering, is a choice that we really liked because it is close to the tradition of our farmers who breed the pig and immediately process its meat.
