Villa Capodaglio

Artisans of the Vineyard

Our grapes are selected and picked by hand at the first light of the morning in order to encourage a more natural and spontaneous fermentation.

The wines are then refined in the old cellar and rest partly in modern thermoconditioned tanks and partly in the old wooden barrels and stone barrels typical of our land, encouraging the natural fermentation and maintenance of the highest organoleptic qualities of the grapes.

Among the rows grow combinations of selected herbs that promote the rich and healthy nourishment to our vines of Cabernet, Merlot, Refosco dal Peduncolo Rosso, Chardonnay, Pinot Grigio, Palava and Glera.

The pruning of vine plants and the mowing of the grass are destined to be returned to our land as a natural organic compost.

The Vineyards

The nature of the soil transmits particular flavors and aromas to the grapes. In fact, under the surface layer of loose soil, there are layers of "scaranto" and deeper rock, probably the slopes of the nearby Euganean Hills of volcanic origin.

The vineyards, cultivated according to modern plant layouts and directed to limited production, give high quality grapes which, vinified with the most innovative fermentation methods at controlled temperatures, allow to obtain a quality product destined to a consumer attentive to the most intrinsics of wine.

A Small Village, Many Experiences

20 hectares dedicated to vineyards with 3 types of white: prosecco, chardonnay and pinot grigio and 3 of red: refosco dal peduncolo rosso, cabernert and raboso.

New experiences and new aromatic profiles outline our continuous research: we experiment with the grafting of the Palava, an innovative crossover with an enveloping and unusual scent.

The Cellar

Built in 1600, this building below ground level, with walls up to 2 meters thick, is the ideal place to work and preserve wine with natural techniques: by its nature it maintains constant temperature and humidity levels that make refining and aging precious. aging of wines.

In 2010 it was completely modernized. We have purchased a modern and effective equipment for processing grapes and musts.

The wine is stored in steel tanks equipped with refrigeration system, and then processed until bottling, always observing the most scrupulous hygiene rules.

In addition to modern steel barrels, wood and stone barrels are used to give perfumes and flavors that are always different and optimal without the addition of chemicals.

Organic Forest

"You will make food your first medicine and your first medicine will be food." Hippocrates

Organic Forest to face the challenges of the future in agriculture, respecting our lands and its good fruits.

We are working for a sustainable and natural agriculture that goes beyond the traditional organic system and methods. This method will allow us to give back to the grapevine and to all our products the natural characteristics of the plant giving a high organoleptic and energetic value without the use of synthetic chemicals.

Photovoltaics

In 2010 the company built 2 photovoltaic plants for the production of clean energy.
