Our caviar is an Italian product, 100% made in Italy, bred in the precious waters of the city of Calvisano. History



Royalfood was born to commercialize the high quality caviar produced by "Acipenser S.r.l.". The breeding is managed and managed daily on site by Dr. Carlo Dalla Rosa, recognized as a top expert, in Italy and abroad, of sturgeoning. Carlo Dalla Rosa, PhD in Animal Production Sciences and specialization in fish farming, at the beginning of the 90s, as a manager of a trout farm, with a vision projected into the future, initiated an ambitious project of rearing sturgeon.


Within a few years a 1 km plant is built, with 80 tanks that are populated by different species of this prehistoric fish. Years of study and scientific research, passion and sacrifice and an unparalleled 25-year-long experience lead to the production of Royal Food caviar; four types of product that best reproduce the characteristics of wild caviar.



Nancy D'Aiuto, Carlo's wife, infected by her husband's passion, decided to start direct marketing in Italy of this fascinating product in 2011, successfully proposing it to restaurants and private individuals. Previously all production was directed abroad. Royal Food Caviar Passion is born: the choice to create the difference.


Leading company in Europe, Acipenser S.r.l. operates in compliance with precise international standards and certifications, with an average annual production of 10 tons. The sustainability guarantee is certified by the Friend of The Sea brand. Aquaculture is one of the most effective ways to protect these animals and to curb the illegal trade resulting from poaching (which creates a market with production without controls and without hygienic and sanitarie guarantees).



Currently the sturgeon is in danger of extinction, the CITES international organism that regulates the trade in protected species has banned fishing all over the world. The advantages of breeding are different: control of the entire supply chain, possibility of extracting the eggs from the sturgeons at the optimal moment of maturation, freshness: the eggs are extracted and packaged to order and in conditions of semi-sterility.


Lower prices and the qualifying and quantitative constancy is guaranteed. The Acipenser breeding is a former trout breeding and, as such, maintains a high water turnover (up to 2,000 l / sec.), with a total replacement cycle every 4 hours. The water temperature is 13-20 ° C, ideal for sturgeon.



The exchange and temperature of the water, the use of specific feeds that guarantee an absolute absence of GMOs and the strict hygiene-sanitary controls are essential elements to guarantee the excellence of the product. The breeding is complete cycle: from eggs, to fry, to mature females, with constant monitoring to allow complete traceability of the product: identification of the production lot and amount of caviar extracted exclusively from a single female to ensure absolute homogeneity . Subjected to strict sanitary controls, the rearing and marketing of sturgeon and caviar are protected by CITES.

To avoid it, CITES (the world surveillance body for the survival of endangered species), has decreed the prohibition of fishing worldwide, so the caviar marketed can only be breeding. If it is not it means that it is a product of fraud, without controls and without sanitary guarantees.


Etymology



The term "caviar" refers purely to the sturgeon eggs of the Acipenseridae family subjected to salting. This family includes 28 species, but the famous ones from the immemorial era are 4: Beluga (Huso Huso), Oscietra (Acipenser Gueldnstaedtii), Siberian (Acipenser Baerii) and Naccarii (Acipenser Naccarii).

Caviar is packaged as requested by our customers. All our types are "Malossol" (use of a little salt). Caviar is ideal for special occasions, to experience unique emotions and sensations.

Today How is Gusta the Caviar?



Always better if "tasted" naturally, in purity, to fully appreciate its characteristics. It can be tasted in the spoon, as an appetizer with blinis and créme fraiche, with potato or with a boiled egg. You can use it with spaghetti or with a risotto with champagne or raw fish (the best is raw crayfish).


How and How Long is It Stored?



In the refrigerator from 0 to 4°. Check the expiry date on the back. Once opened it should be consumed immediately... but this is usually not a problem. If it remains of the product, the can must be closed well and put back in the fridge, always below 4° C: however, the consumption must take place within a couple of days.
