The Trout, Of Course



Our History - Tradition and Research of Excellence



The Sterpo Agricultural Company, in the homonymous village of Sterpo, in Friuli, for over 50 years of activity, today transforms about 15.000 quintals of trout per year - divided between rainbow trout, brown trout and char - in fresh fillets, hamburgers and other delicacies in various specialties.

The village is rich in ancient medieval tradition and is immersed in the great park of the Stella river.



The Company, always attentive to the quality of raw materials, transforms only products of superior quality bred in the waters of the surrounding territory: in pure, cold and oxygen-rich waters. An activity that draws its best from nature without affecting its equilibrium.

Modern technologies, care, experience and constant health checks have led to the development of an important supply specifications in compliance with a strict Quality Plan and the SA8000 directives.


Our Breeding - Quality and Respect of the Territory



The natural environment is an important element of the physiognomy of Sterpo and of our farms. Il Borgo is located at the sources of the river Stella, an area rich in water and close to the resurgence area, springs generated by the snowy and rainfall of the Carnic Alps and the foothills, which sink into the frozen ground to return to the surface thanks to impermeability of the deep layers of the ground further downstream.

Resurgent water is the ideal habitat for many fish species, such as salmonoids, of which trout is the queen.


Certifications and Respect for the Environment



In 2003 the company obtains the ISO 9001 certification and in 2006 the "Friends of the Sea" brand, thanks to a careful environmental policy which respects biodiversity.

He also received the 2007 Interreg prize in Austria for product innovations.

Sorgente del Gusto offers you the products of the Trout line of Sorgente: made only with the best trout of the Friuli resurgences, they are products designed to bring every day the well-being of the fish on your table with taste.



Easy to cook, low in saturated fats and rich in omega 3, they are ideal products for a healthy, balanced and nutritious diet.


Fresh



The freshly caught fish is selected and processed according to tradition.

White and salmon trout, whole, eviscerated and filleted.

Trout-based specialties: medallions (fish burger), skewers, rolls, rochelle, roasters, carpaccio.


Smoked



The smoking with precious woods and aromatic herbs enhances the flavors of the trout and preserves its genuineness.

- Trout ham, trout fillet smoked cold, ideal as an appetizer on hot croutons

- Trout rose and trout with natural flavors, hot smoked, to taste with oil and lemon juice

- Char of spring, hot smoked fillet to taste with oil and lemon juice

The trout at the table is synonymous with refined simplicity. The delicacy of its tender and firm meats goes perfectly with the soft and aromatic flavors.
