Bottega S.p.A. it is at the same time a winery and a distillery, which has a close-knit team of expert winemakers both in winemaking and in distillation. The headquarters is located in Bibano di Godega (TV), in the Doc Prosecco area, 50 km north of Venice. The company was founded in 1977 by Aldo Bottega, master distiller with more than thirty years of experience in the field, which he had inherited from his grandfather, an expert wine merchant during the '20s, the passion for the world of wine. At the end of the '70s the company is a small company operating in the local grappa market.
In 1983, on the death of the founder, his son Sandro, together with his brothers Barbara and Stefano, took over the company. From an artisan reality, which operated only in the world of grappa, it has transformed over the years into one of the first 20 private wineries and distilleries. In the duty free and travel retail channel it has burned down the stages and, as far as sparkling wines are concerned, has become the second brand in the world, after a well-known Champagne brand. On the right bank of the Po, in the extreme south of the Lombardy region ('beyond the Po'), lies this land of rolling hills characterized by climatic and geomorphological conditions extremely favorable to the cultivation of vines.
The climate is temperate, with high temperature ranges, dry in winter and breezy in summer.
The soil has sedimentary soils with marl consisting, in equal quantities, of limestone and fine clays.
Production Process
The grapes are harvested and quickly brought to the cellar to preserve their quality and avoid alterations that could be caused by:
- early oxidations;
- microbial contamination;
- sun exposure.
We proceed to the white vinification of the grapes, with immediate separation of the skins from the must by means of a soft pressing.
The base wine is then subjected to the second fermentation carried out in an autoclave according to the Charmat Lungo method:
- the specific selected yeasts for this winemaking method are added;
- the temperature is set at 14/15 ° C to avoid the risk of slowdowns or fermentation blocks and to avoid a decrease in the richness and finesse of the aromas and a change in color;
- at the end of the fermentation process the wine is left to age on the lees for a long time.
The entire process lasts at least 3 months during which the mass is stirred daily to put the fermentation sediments in suspension; this operation favors a greater and more intense contact of the wine with the lees with consequent enrichment of its structure and increase in the complexity of its sensorial profile.
Finally it is stabilized at a temperature of -5 ° C to be then filtered and bottled.

Straw yellow, brilliant, fine and persistent perlage.
Smell
Complex, elegant and refined bouquet, characterized by light and pleasant hints of bread crust and yeast with a delicate floral nuance at the end.
Taste
Full, round and soft, with excellent structure and retro olfactory persistence, it is characterized by flavor, balanced acidity, aromas of yellow fruit which, on the finish, turn towards sweet almond.
