Vinification and Maturation
Maturation in steel up to tirage, then re-fermentation in the bottle and ageing on the fine lees for 36 months
Appearance
Straw yellow with gold highlights, slender bead of long-lingering bubbles
Bouquet
Pungent notes of lemon balm and sage meld beautifully into citrussy impressions of bergamot and lime
Palate
Crisp, smooth, and creamy, with an intriguing minerality. The finish is impressively lengthy
