Fantinel - Feel the Emotion
Once upon a time there was a man with a radiant smile who venerated good food so much that it became his reason for living. And in such a joyful parade of pleasure, wine sat on the royal throne. As a restaurateur and hotelier in northern Friuli, Paron Mario soon realized that his mission was to give people emotions with his special love for wine and that, to do it fully, he had to produce wine with his own hands. 1969 was the year when he acquired the first vineyards in the Collio area, the year when the great adventure started. This engaging adventure soon featured his sons Luciano, Gianfranco and Loris as the protagonists.
The three turned their father’s teachings into virtues, learning to touch and feel the soil, follow the time and the flow of the seasons, taste the grapes getting a glimpse of the secret of their little-big miracle. In the following years the family’s land ownership increased and many dreams came true.
That small agricultural company today, with the third generation represented by Marco, Stefano and Mariaelena, has become an internationally prestigious winery, ambassador of Friulian winemaking art in the world. But the origins have not been forgotten and, what’s more, the flame of passion is increasingly vivid.

At that basis of this leadership in Prosecco regional scene there is a very peculiar and sophisticated production process, with a fundamental starting point: honouring the land in its natural rhythm and taking from it the best fruits, on the basis of the respect of the plant vegetative cycle.
At Fantinel Estate in Tauriano di Spilimbergo, in Friuli Grave area, the particular territory and climate are so generous that give our grapes rare qualities, especially for Sparkling wines. From a dedicated single vineyard, with a very low yield per hectare, careful hands select the healthiest grapes donated by the vintage. A gentle crushing allows to extract a preciously rich juice, that is directly introduced in “autoclave” steel tanks to start the fermentation and, in a single cycle, the sparkling process aiming at strengthening the fruits’ primary aromas. After 120 days of maturation, Fantinel “One & Only” Prosecco is ready.
Once uncorked, its distinctiveness can be immediately perceived. An explosion, with a great elegance, of white flowers, harmonizing joyfully with deep fruity aromatic essences. The impact on the nose is a graceful prelude of what is reserved to the palate. An extraordinary balance, mixing a pleasant acidity with a velvety smoothness, reveals a full structure that, with intensity, captivates the whole mouth and offers a delightful after-taste. Hand-harvested and visually selected grapes undergo the crushing-destemming process, but not the pressing one, in order to extract, just through a static draining, the free-run juice (30% by the draining); the must is directly introduced in small “autoclave” (stainless steel tanks) for the fermentation and sparkling process with selected natural yeasts (Charmat Method - 120 days).
