Bottega - Family Vintners & Master Distillers since 1635
Bottega S.p.A. it is at the same time a winery and a distillery, which has a close-knit team of expert winemakers both in winemaking and in distillation. The headquarters is located in Bibano di Godega (TV), in the Doc Prosecco area, 50 km north of Venice. The company was founded in 1977 by Aldo Bottega, master distiller with more than thirty years of experience in the field, which he had inherited from his grandfather, an expert wine merchant during the '20s, the passion for the world of wine. At the end of the '70s the company is a small company operating in the local grappa market.
In 1983, on the death of the founder, his son Sandro, together with his brothers Barbara and Stefano, took over the company. From an artisan reality, which operated only in the world of grappa, it has transformed over the years into one of the first 20 private wineries and distilleries. In the duty free and travel retail channel it has burned down the stages and, as far as sparkling wines are concerned, has become the second brand in the world, after a well-known Champagne brand. Production Area
The grapes used for the production of this rosé sparkling wine are grown in soils of alluvial origin composed of sand, gravel, clay and rich in limestone, draining soils that, at the same time, can act as a reserve of water and nutrients for the vine . An area protected from cold winds that is affected by the beneficial effect due to the proximity of the Adriatic Sea. Ideal conditions for the cultivation of grapes.
Production Process
After the harvest, the grapes are de-stemmed, the grapes gently pressed and the must is left in contact with the skins for 12-18 hours at about 8-9 ° C. Cold maceration allows extraction:
> of coloring substances;
> of the primary aromas of the grape present in the inner part of the skin (facilitated by the cold that causes the breakdown of cell membranes);
> of mannoproteins and polysaccharides in general.
In this way a rosé must is obtained, richer in varietal aromas and more structured.
By means of a soft pressing, the must thus obtained is separated from the skins. A part (about 75%) is fermented and a sparkling wine base is obtained which is stored in steel for about two months. This sparkling base is then cut with the must that has been stored at zero degrees in a refrigerated tank and, as the Martinotti method requires, is taken to foam into an autoclave.
At the end, the wine is left in contact with the no longer active yeasts which, thanks to the autolysis process, release a series of substances that increase their body, structure and aroma. Finally, after cold stabilization, it is filtered, bottled and, after a period of aging in bottle, it is ready to delight even the most demanding palates.

Bouquet
Intense, delicate and refined, characterized by an aroma reminiscent of rose petals, which is accompanied by hints of peach, melon and exotic fruit and delicate spicy notes in the finish.
Taste
Elegant, velvety, slightly sweet, it presents an excellent freshness, given by its lively acidity, and a notable retro-olfactory persistence.
