It represents the spearhead of the San Simone production. The richest grapes are selected with the aim of achieving the highest level of typicality, elegance and concentration possible. We prefer steel for the fermentation and maturation of our wines, but in the last twenty years, for some varieties, we wanted to experiment with the small barrel as an instrument to enhance the characteristics of the fruit and the territory. The barrique therefore as a means not to add and cover but possibly to take off, as a discreet and silent actor.

Plain of alluvial origin in Friuli-Venezia Giulia, western part of the Grave, municipality of Azzano Decimo.
Variety
100 % Merlot.
Vineyards
Spurred cordon training system, 4,500 plants per hectare, yield 50 ql / Ha.
Harvest Period
Fourth week of September / First week of October.
Winemaking
Destemming followed by about 20 days left on the skins in stainless steel tanks at controlled temperature (26-28° C); after racking, fermentation continues in small oak barrels where it matures for about 18 months. The maturation continues for 6-12 months in steel tanks before bottling. Aged in bottle for 6 months.

Drink immediately or keep for up to 10-12 years.
Color
Intense ruby red with violet reflections.
Perfume
Intense and variegated, centered on fruity and spicy notes, it has a rich olfactory range that ranges from blackberry jam to cherries in spirit, from cloves and black pepper to chocolate.
Taste
Full bodied and intense, round and harmonious, it has a strong tannic structure and shows a well-melted freshness with soft notes. Perfectly corresponding to the nose it is velvety and sapid; the finish is persistent and closes on tones of fruit and spices.
Serving
Suitable with savory first courses, such as risotto with mushrooms or chicken livers and meat ravioli. It goes nicely with boiled meat, grilled red meat and roasts. Its full flavor blends well with aged hard cheeses. Excellent with the beef rib steak.

Serve at 20-22° C.
