Winemaking
The grape is picked and sorted manually and after being destemmed and softly pressed, it is sent to vats for vinificaiton. Each variety is strikly vinified separately, alcoholic fermentation lasts for 10 days at a controlled temperature of 26 ° C, and maceration continues for another 22 days. The wine is poured into new Alliers oak tonneaux where malolactic fermentation takes place until around the end of November. The wine remains for 9 months before it matures. Dolce Vite stays in the cellar to age in the bottle for six months before being released.
