90% Sangiovese, 10% other vines
Winemaking
Grape is picked and sorted manually and after being destemmed and softly pressed, it is sent to vats for vinificaiton. The maceration on the skins is carried out for 22 days at controlled temperature in steel tanks at 28 °C. Alcoholic fermentation lasts on average 10 days. The wine is then poured into oak barrels of 30hl, where it is aged for 12 months and malolactic fermentation takes place. After this year, the wine returns to steel tanks for about a month, to be slightly filtered, bottled and undergone to 4 months of further aging.
