Bottega - Family Vintners & Master Distillers since 1935
Bottega S.p.A. it is at the same time a winery and a distillery, which has a close-knit team of expert winemakers both in winemaking and in distillation. The headquarters is located in Bibano di Godega (TV), in the Doc Prosecco area, 50 km north of Venice. The company was founded in 1977 by Aldo Bottega, master distiller with more than thirty years of experience in the field, which he had inherited from his grandfather, an expert wine merchant during the '20s, the passion for the world of wine. At the end of the '70s the company is a small company operating in the local grappa market.
In 1983, on the death of the founder, his son Sandro, together with his brothers Barbara and Stefano, took over the company. From an artisan reality, which operated only in the world of grappa, it has transformed over the years into one of the first 20 private wineries and distilleries. In the duty free and travel retail channel it has burned down the stages and, as far as sparkling wines are concerned, has become the second brand in the world, after a well-known Champagne brand. The unmistakable Bottega Gold, a Prosecco Doc characterized by the bottle with golden livery, is an icon of style that is appreciated throughout the world as an expression of the best Made in Italy.

Production Area
The area of Montalcino is characterized by a mild climate during the entire vegetative phase of the vine and by a high number of sunny days, which ensure a gradual and complete maturation of the grapes.
The Sangiovese grape, which gives rise to this wine, is grown in two different areas of Montalcino, both rich in galestro, a clayey, schistose, friable rock that gives the soil excellent draining properties.
The area facing south-east (with older vines between the ages of 5 and 25) is characterized by a greater concentration of sandstone and volcanic tuff; the soil is more fertile, deeper and with less skeleton.
The area to the west (with younger vines aged 6 or less) has a less deep, less fertile soil with a prevalent skeleton; the temperatures in this area are lower.
In these draining soils in the rainy years the vines do not suffer the consequences of water stagnation. At the same time, in dry years, the roots can penetrate deeply into the ground, where they can find water and nutrients.
Production Process
The grapes, harvested manually, are subjected to destemming-crushing with elimination of the stalk.
The vinification takes place in steel tanks at a controlled temperature with maceration on the skins for about 25 days, during which daily pumping takes place. Using an ancient technique, in the fermenting must some bunches are left whole. An increase in the total extract is thus obtained which results in a fuller and rounder body and an improvement in the aromatic potential.
The wine is then left in steel tanks for about 3 months, during which it proceeds with malolactic fermentation. The wine becomes softer and the aromas are more complex and "mature".
It is then cold-stabilized and matured in Slavonian oak barrels for around 3 years.
A part of the mass is refined in tonneaux (capacity of 5 hectoliters) while another part of the mass in wooden barrels from 15-25 hectoliters. The contact of the wine with the wood, as well as the oxygenation due to the entry of oxygen through the staves, are greater in the tonneaux which are smaller in size.
In larger wooden barrels, the wine is subjected to a more delicate refinement process, characterized by a lower transfer of substances from the wood itself. All these variables (different sites, soils, microclimates, age of the vines, capacity of the containers) make it possible to obtain a structured, elegant, complex wine with great longevity.
The Brunello di Montalcino DOCG can be sold, as required by the regulations, from 1 January of the 5th year following the year of harvest.

Characteristic, intense, persistent, with hints of berries and violet, musk, spices and aromatic wood, accompanied by notes of vanilla, jam and, in closing, balsamic aromas.

Warm, structured, robust, complex, soft, with elegant tannins perfectly balanced with the alcohol content, with a pleasant and persistent aftertaste.
