Cantina Nepos Villae - Classic Valpolicella - Wine Carved in The Stone

A territory steeped in history and humanity, marked by small stone villages and silent districts, ancient fountains and marble wash-houses. Dorsals crossed by long dry stone walls, the marogna, carved between marl and rock, in support of vineyards, olive trees and cherry trees. Ancient Romanesque churches raise the bell towers beyond the gaze. They mark the territory and merge with towers and ruins of medieval castles. Capitals marked by ancestral frescoes, remain a sentinel of the human soul. Valpolicella tells the silences and throb of a never tame humanity.

Harvest

Hand with placement of the grapes in the box in the second week of September. Part of the grapes was dried for a period of 40 days.

Fermentation

Vinification in steel at controlled temperature and subsequent light cryomaceration with hand punching down.

Aging

After vinification in red the wine is passed on the pomace of the Amarone of the following year and a period of contact with the skins of about 30 days is applied. After having performed the Ripasso technique, it is drained and passed to aging in large French oak barrels of Allier and Troncais for 18 months. Subsequently the wine is left to refine in bottle about 6 months before being put on the market.

Organoleptic Characteristics

The color of the wine is particularly intense with a ruby ​​red hue and a purple reflection. Its scent is rich in red fruit and in particular of ripe cherry and wild berries. Withering sensations due to the Ripasso technique, more corpulent and decisive tannin but particularly round and pleasant on the palate. Good spiciness with a definite sensation of black pepper and a special note of warm nutmeg. Persistent finish with an evident sensation of fresh cherry and almond dried fruit. Finely balsamic with an intriguing menthol note.

Serving

The Valpolicella Superior Ripasso Strada Campiona is a very versatile product with a capacity for great adaptation in the kitchen. Before that, a wine that fascinates younger palates and is also preferred for lounge time to accompany appetizers and small savory pastries based on salami and medium-flavored cheeses.

Excellent to accompany Sopressa and salami in its various Italian facets. Pleasant with cheeses of the Alpine foothills tradition, Piedmontese tome, Monte Veronese Mezzano DOP, Asiago DOP seasoned and Vezzena d'alpeggio. Intriguing also with goat cheese of Sicilian origin from Maltese goats. It goes well with pasta dishes based on meat sauces, meat bites with a knife tip, Romagnola or Chianina igp. Pleasant for Tuscan toasts and Piedmontese fassona steaks.
