Winemaking
The grape is picked and sorted manually and after being destemmed and softly pressed, it is sent to vats for vinificaiton. The alcholic fermentation is carried out for 10 days at controlled temperature of 26 °C. The wine then rests on the skins for another 10 days in order to get the maximum extraction of all the organoleptic substances. The wine is then poured into French tonneaux where it will rest for 9 months, later it is filtered and bottled. Dolce Vite Syrah will then stay 4 months in the cellar for a further refinement before being ready to sell.
