Winemaking
In this frame, in the first decade of September the harvesting is carried out and grapes are strictly cut by hand. The particularity of the Tuscan label lies in the use of grapes of the previous year, in proportion to 5% of the total quantity. The assembly of different vines and vintages gives this white wine one of the most characteristic and singular tastes of the region. Once the grapes of the current harvest have been brought to the farm and have undergone a soft destemming, fermentation begins. The obtained liquid remains at a controlled temperature of 24-26 ° C for about 12 days, after which the wine is then transferred to large stainless steel vats. Within these tanks, the aging process takes about 6 months to allow the development of the characteristic organoleptic qualities of the product.
