Bottega - Family Vintners & Master Distillers since 1635

Bottega S.p.A. it is at the same time a winery and a distillery, which has a close-knit team of expert winemakers both in winemaking and in distillation. The headquarters is located in Bibano di Godega (TV), in the Doc Prosecco area, 50 km north of Venice. The company was founded in 1977 by Aldo Bottega, master distiller with more than thirty years of experience in the field, which he had inherited from his grandfather, an expert wine merchant during the '20s, the passion for the world of wine. At the end of the '70s the company is a small company operating in the local grappa market.

In 1983, on the death of the founder, his son Sandro, together with his brothers Barbara and Stefano, took over the company. From an artisan reality, which operated only in the world of grappa, it has transformed over the years into one of the first 20 private wineries and distilleries. In the duty free and travel retail channel it has burned down the stages and, as far as sparkling wines are concerned, has become the second brand in the world, after a well-known Champagne brand. Dry obtained from the vinification of Glera grapes harvested in a limited area, among the most exclusive locations for the production of this sparkling: “Rive” di Guia. It is the authentic expression of a territory where climate and morphological conditions are ideal for the grapes to reach their full ripening.

The Glera grapes used for the production of this wine come from an area that is affected, in the north, by the protection offered by the pre-Alpine chain, a natural barrier against cold currents, and to the south by the proximity of the sea and lagoon areas. The climate is therefore temperate, with cold winters but not excessively harsh and hot summers but not too sultry.

The steep slope, typical of the "Rive", allows an excellent interception of the sun's rays and helps to promote, during the ripening period of the grapes, marked thermal excursions between the day
and the night, thanks to the descent along the slopes of fresh air coming from the Prealps. These conditions are translated into a more complex and elegant bouquet.

The thin and not very deep soil, originated by the raising of the seabed, and then modified by the action of the rivers, consists essentially of marls and sandstones of calcareous and clayey composition, which give the wine characteristics of salinity and minerality. .

The rains are generally frequent during the summer and guarantee the water supply necessary for the ripening of the grapes.

Production Process

As required by the specification, the grapes are harvested exclusively by hand and this allows to select only the healthiest and most mature bunches, safeguarding their integrity and organoleptic heritage.

It then proceeds to the pressing that is performed in a "soft" way, with low pressures, to extract the essential compounds to the body and the structure but not the phenolic compounds that can cause instability endangering both the quality and longevity of the sparkling wine.

The must is then kept at a low temperature in steel tanks and purified, by means of static decantation, of substances that could develop into heavy and unpleasant aromas.

After the first fermentation, we proceed to the second fermentation with Martinotti method, in an autoclave, at a controlled temperature of 14-15 ° C with the yeasts selected in the traditional areas of cultivation of the Glera grapes and the production of Prosecco wine.

At the end of fermentation, the wine is left in refinement on the noble lees for about two months during which, following the autolysis of the yeasts, substances are released that enrich the body, the structure and the aromaticity , balancing the sugar content.

Following the cold stabilization, the wine is filtered and bottled. After a few days of aging in bottle, it is ready to delight even the most refined and demanding palates.

Organoleptic Characteristics

Straw yellow, with fine foam, fine and persistent perlage.

Bouquet

Elegant, neat and refined, it opens with predominant fruity notes of apple, pear, banana and peach, evolving into fruity hues of wisteria and jasmine.

Taste

Rounded, ample, creamy, with a characteristic sapidity, a good structure and a delicate, pleasant note of ripe fruit.
