It represents the spearhead of the San Simone production. The richest grapes are selected with the aim of achieving the highest level of typicality, elegance and concentration possible. We prefer steel for the fermentation and maturation of our wines, but in the last twenty years, for some varieties, we wanted to experiment with the small barrel as an instrument to enhance the characteristics of the fruit and the territory. The barrique therefore as a means not to add and cover but possibly to take off, as a discreet and silent actor.

Production Zone
Land of alluvial origin, clay loam and medium limestone, western part of the Grave, in the municipalities of Porcia and Pasiano.
Variety
100 % Merlot.
Vineyards
Guyot training system, 4000 plants per hectare, yield 80 ql / ha
Harvest Period
II / III week of September.
Winemaking
Destemming and short stop in steel vats in contact with the skins. After the racking and the decantation begins the primary fermentation, strictly controlled. The wine is then decanted, to separate the yeasts and rests in steel containers awaiting frothing.
Sparkling
Reference of the base wine in an autoclave, where it ferments for about 20 days, with the help of selected yeasts, at a constant temperature between 16 ° - 18 ° C. Once the desired overpressure has been reached, the mass is cooled (- 4 ° C) to stop the fermentation and favor stabilization. Subsequently the wine is kept at a controlled temperature of 8-10 ° C for at least three months, in order to favor the natural aging in contact with the yeasts. At the end of this phase filtration and isobaric bottling are carried out.

Fine and persistent that ensures cleanliness of the palate.
Color
Soft pink, silky and bright.
Perfume
It has a complexity of perfumes and great elegance. In the beginning there are variegated floereal and fruity notes, with bergamot and mandarin franges, which blend with vegetable aromas of aromatic herbs. The typical hints deriving from refinement on the yeasts are perceptible in a very delicate and harmonious way.
Taste
Elegant, complex, fresh and fruity, with light notes of pomegranate and rosehip petals, accompanied by a delicate aroma of fresh fruit, citrus and licis.
Serving
Ideal as an aperitif. Excellent with raw ham, sea fries, white fish carpaccio, fried artichokes.
