Bottega - Family Vintners & Master Distillers since 1635
Bottega S.p.A. it is at the same time a winery and a distillery, which has a close-knit team of expert winemakers both in winemaking and in distillation. The headquarters is located in Bibano di Godega (TV), in the Doc Prosecco area, 50 km north of Venice. The company was founded in 1977 by Aldo Bottega, master distiller with more than thirty years of experience in the field, which he had inherited from his grandfather, an expert wine merchant during the '20s, the passion for the world of wine. At the end of the '70s the company is a small company operating in the local grappa market.
In 1983, on the death of the founder, his son Sandro, together with his brothers Barbara and Stefano, took over the company. From an artisan reality, which operated only in the world of grappa, it has transformed over the years into one of the first 20 private wineries and distilleries. In the duty free and travel retail channel it has burned down the stages and, as far as sparkling wines are concerned, has become the second brand in the world, after a well-known Champagne brand. The unmistakable Bottega Gold, a Prosecco Doc characterized by the bottle with golden livery, is an icon of style that is appreciated throughout the world as an expression of the best Made in Italy.

For the production of this wine, a blend of the most suitable varieties for the production of sparkling wines is used, grown in territories with a long viticultural tradition, which present the optimal conditions for reaching the perfect degree of maturation: the temperate climate, the good exposure, the draining, calcareous-clayey soils and moderate fertility make it possible to maintain good minerality, correct acidity and excellent perfumes.
Production Process
The grapes, cultivated with the Sylvoz system typical of these areas, are generally harvested in early September and quickly taken to the cellar in order to avoid mechanical damage, early oxidation, microbial contamination and exposure to the sun which could cause alterations to the product, compromising its quality. We proceed with the destemming, the soft pressing of the grapes in order to separate the skins from the must. The first fermentation takes place in steel tanks after the addition of selected yeasts. In accordance with the Martinotti method, the second is instead developed in an autoclave, a particular pressurized steel tank that allows precise control of both pressure and temperature, maintained at 15-16 °C to preserve the fragrance. Fermentation does not stop, but is carried out until the sugars are almost completely exhausted, less than 3 grams per liter remain, and this allows to obtain a "pure" wine, with whole bubbles and a bouquet that is an expression of the true essence and aroma of the starting grapes. A wine of great character and personality, which stands out in the panorama of sparkling wines which are generally produced in the most common BRUT and EXTRA DRY versions.
Organoleptic Characteristics
Color and Appearance
Straw yellow, brilliant, the perlage is fine, lively and persistent.
Smell
The nose has delicate fruity notes, in particular of apple and nectarine peach, elegant hints of acacia flowers and, in closing, a fresh citrus note.
Taste
Dry and dry, it has a sapidity in perfect balance with the acid structure and is characterized by mineral notes and a long aromatic persistence.
