Bottega - Family Vintners & Master Distillers since 1635

Bottega S.p.A. it is at the same time a winery and a distillery, which has a close-knit team of expert winemakers both in winemaking and in distillation. The headquarters is located in Bibano di Godega (TV), in the Doc Prosecco area, 50 km north of Venice. The company was founded in 1977 by Aldo Bottega, master distiller with more than thirty years of experience in the field, which he had inherited from his grandfather, an expert wine merchant during the '20s, the passion for the world of wine. At the end of the '70s the company is a small company operating in the local grappa market.

In 1983, on the death of the founder, his son Sandro, together with his brothers Barbara and Stefano, took over the company. From an artisan reality, which operated only in the world of grappa, it has transformed over the years into one of the first 20 private wineries and distilleries. In the duty free and travel retail channel it has burned down the stages and, as far as sparkling wines are concerned, has become the second brand in the world, after a well-known Champagne brand. The unmistakable Bottega Gold, a Prosecco Doc characterized by the bottle with golden livery, is an icon of style that is appreciated throughout the world as an expression of the best Made in Italy.

Millesimato Rosé Stefano Bottega is a sparkling wine with a marked aroma, which originates from a blend of Glera, Chardonnay and Raboso. Production Area

The cultivation area of the Glera, Chardonnay and Raboso grapes used for the production of this wine extends into the Prosecco DOC area.

These areas are characterized by a climatic climate and clayey soils of alluvial origin rich in minerals, ideal conditions for being able to best express the properties of these grapes.

Production Process

The grapes are harvested when the sensory analyzes carried out on the grapes in the vineyard and the analyzes of the ripening indexes show a natural acidity and good minerality (induced by the soil).

Since the two varieties have different maturation times, they are vinified separately.

The Glera and Chardonnay grapes are generally harvested in mid-September. We proceed with the destemming, the soft pressing and finally with the cleaning
of the must.

The first fermentation takes place in steel tanks after the addition of selected yeasts.

Raboso, on the other hand, is harvested from mid-October. After the harvest, the grapes are destemmed and softly pressed.

Subsequently, the must is separated from the skins and fermented at a controlled temperature.

The two wines obtained will then be blended and re-fermented according to the Martinotti Method at a controlled temperature of 15-16° C and the refermentation process lasts an average of 30 days.

Organoleptic Characteristics

Color and Appearance

Bright pink, fine and persistent perlage.

Smell

Complex olfactory notes with floral hints of undergrowth and fruity hints of pear and peach with white pulp.

Taste

Fresh and slightly sapid, it reproduces a complexity similar to the olfactory one on the palate.

Pairings

Excellent as an accompanied aperitif, it is a wine for the whole meal that goes well with cold raw fish dishes (tartare and tuna or swordfish carpaccio), with simple cold cuts such as raw and cooked ham, salami and soppressa, not too elaborate meat and fish such as pork tenderloin with vegetables or baked fish with potatoes.
