Bottega - Family Vintners & Master Distillers since 1635

Bottega S.p.A. it is at the same time a winery and a distillery, which has a close-knit team of expert winemakers both in winemaking and in distillation. The headquarters is located in Bibano di Godega (TV), in the Doc Prosecco area, 50 km north of Venice. The company was founded in 1977 by Aldo Bottega, master distiller with more than thirty years of experience in the field, which he had inherited from his grandfather, an expert wine merchant during the '20s, the passion for the world of wine. At the end of the '70s the company is a small company operating in the local grappa market.

In 1983, on the death of the founder, his son Sandro, together with his brothers Barbara and Stefano, took over the company. From an artisan reality, which operated only in the world of grappa, it has transformed over the years into one of the first 20 private wineries and distilleries. In the duty free and travel retail channel it has burned down the stages and, as far as sparkling wines are concerned, has become the second brand in the world, after a well-known Champagne brand. The unmistakable Bottega Gold, a Prosecco Doc characterized by the bottle with golden livery, is an icon of style that is appreciated throughout the world as an expression of the best Made in Italy.

The cultivation area of the Glera variety grapes is close to the Venetian Pre-Alps and is characterized by long but not excessively cold winters and hot but not muggy summers;

The vines in these areas thrive on soils of a different nature, with a variability of soils, exposures, slopes that make this Prosecco a wine with many nuances;

Hilly terrains are subject to high temperature variations between day and night. This difference in temperature allows for the development of finer, more elegant and at the same time more intense aromas.

Production Process

The grapes are harvested by hand, allowing for:

- carry out a graduated harvest, or rather collect the grapes from the same vineyard in successive moments based on the degree of ripeness;

- select the bunches, picking only the ripe, healthy and suitable ones;

- protect the integrity of the grapes.

Pressing is carried out in a "soft" way with low pressure.

The must is kept at a low temperature in steel tanks and purified of substances that could develop heavy and unpleasant aromas.

The first fermentation takes place in steel tanks after the addition of selected yeasts. In accordance with the Martinotti method, the second fermentation takes place in an autoclave, at a temperature which is maintained at 14 °C, to preserve the typical fragrance and aromas present in the original grapes.

At the end of fermentation, the wine is left in contact with the no longer active yeasts, which, thanks to autolysis, release substances that enrich the body, structure and aroma, balancing the residual sugar 16-18 g/l.

After cold stabilization, the wine is filtered. Both after filtration and after bottling, it is left
to rest for a few days to allow the various components contained in it to regain their natural balance.

Organoleptic Characteristics

Color and Appearance

Brilliant, straw yellow. Fine and persistent perlage.

Nose

Typical and characteristic, fine and refined, the fruity aromas stand out (above all those of green apple, pear and citrus) and the floral aromas that recall spring (wisteria, acacia and lily of the valley in particular).

Taste

Harmonious, elegant and balanced, it is soft on the palate (thanks to the residual sugar) and at the same time dry (thanks to lively acidity).

Pairings

Excellent as an aperitif, perfect for the preparation of cocktails, it is a wine that can be considered for «all meals». It is indicated in combination with dishes based on radicchio and asparagus, it goes very well with pasta, risottos, fish-based dishes, but also white meat.
