Bottega S.p.A. it is at the same time a winery and a distillery, which has a close-knit team of expert winemakers both in winemaking and in distillation. The headquarters is located in Bibano di Godega (TV), in the Doc Prosecco area, 50 km north of Venice. The company was founded in 1977 by Aldo Bottega, master distiller with more than thirty years of experience in the field, which he had inherited from his grandfather, an expert wine merchant during the '20s, the passion for the world of wine. At the end of the '70s the company is a small company operating in the local grappa market.
In 1983, on the death of the founder, his son Sandro, together with his brothers Barbara and Stefano, took over the company. From an artisan reality, which operated only in the world of grappa, it has transformed over the years into one of the first 20 private wineries and distilleries. In the duty free and travel retail channel it has burned down the stages and, as far as sparkling wines are concerned, has become the second brand in the world, after a well-known Champagne brand. The unmistakable Bottega Gold, a Prosecco Doc characterized by the bottle with golden livery, is an icon of style that is appreciated throughout the world as an expression of the best Made in Italy.

It is a sparkling wine with almost no sugars, obtained with this particular winemaking method developed when the seasons dictated the evolution of the product, before the advent of modern technologies. A wine characterized by an almost non-existent residual sugar and a genuine and authentic flavor due to its popular origins.
This wine is produced with Glera grapes and with a small percentage of Moscato.
Glera grapes are grown on soils suitable for alluvial, clayey and medium-textured soils.
The mild climate and fairly regular water regimes favor the ripening process and the achievement of excellent levels both in terms of acid balance and sugar values.
Moscato grapes, on the other hand, derive from a hilly area originating from the sedimentation of rocks and materials on the seabed and from eruptive phenomena. These are soils with an alkaline character, which favor the production of grapes with a rather high acidity rate, with a good skeleton, draining and rich in minerals and microelements. The climate is temperate, with mild winters and hot, dry summers. The hilly configuration guarantees good thermal excursions capable of giving the wines an unmistakable organoleptic profile.

This wine is produced with appropriately selected Glera grapes and with a small percentage of Moscato grapes.

Production Process
The grapes, harvested from the second half of September, are subjected to destemming-crushing and a short maceration carried out with the aid of dry ice. The action of the cold allows a greater extraction of aromas and coloring substances, as well as noble tannins. The result is a must richer in primary aromas, expression of the single grape variety, and with purer and brighter colors.
At the end, the pressing favors the release of the must and the extraction of the indigenous yeasts present on the skins.
The fermentation is started in the tank. After a few days, once the alcohol content of about 8.5% vol has been reached, it is bottled. The wine is then bottled still alive, or with the yeasts still active and the natural sugars of the grapes, and fermentation is completed slowly in the bottle.
Organoleptic Characteristics
Color and Appearance
Slightly cloudy, with a straw yellow color and an evanescent foam.
Smell
Fragrant and characteristic, the nose opens with fruity hints, among which apple and pear stand out, and evolves, over the months, towards more complex hints of yeast and bread crust.
Taste
Dry, dry but at the same time soft, it has a balanced acidity and a remarkable persistence.

Pairing
It can be served in two ways:
- cloudy or by having the waiter perform, during the service, a remuage that puts the yeasts in suspension.
- clear, having the foresight not to shake it, l leaving the yeasts at the bottom of the bottle which can then be served in a small grappa glass so that they can be consumed separately or dosed in the wine at will.
Excellent as an aperitif, it is an eclectic wine in combinations at the table; particularly suitable with appetizers (such as battered vegetables), seafood first courses (particularly seafood) and vegetables and fish especially if cooked in the oven.
