The choice to have the Food-Chain Traceability certification started from the wish to create a niche product, with the selection of the best production areas and the complete integration into the project of the new generation of vine growers and enotechnicians. This project is designed to protect the environment and the health of the consumer.
Riccardo - Prosecco D.O.C. di Valdobbiadene - Still Wine
The grapes from which it is produced come from the Valdobbiadene’s hills. The grape harvest period is tardive, mid October circa. The wine making phases are done in white, that means without skins.
It is a dry wine obtained after careful grape selection, soft pressing followed by meticulous wine making at controlled temperatures.
Alcohol strength is 11% vol., with a sugar content of 10 gr/liter and total acidity of 6 gr/liter. It has a delicate straw colour, with unripe apple, pear and multi-flower honey aromas. Dry on the palate, harmonious and elegant, the structure is agreeable and persistent and the aftertaste remembers bitter almonds.
