Description

Bombino Nero grapes, that gives origin to this rosè wine, is a typical grapevine in the area north of Bari. It was introduced in Apulia in very ancient times. The vineyards are planted on hilly terrain in the area of Alta Murgia DOCG Castel del Monte. 

The grapes are harvested at the right stage of ripeness and processed according to a simple and natural winemaking technique and produce a dry rosé wine with fruity bouquet in particular of small red fruits, fresh and fruity, smooth taste with well balanced flavors.

Great approach at the table, intriguing as an aperitif.

Alcohol content: 12,5% vol 

Harvest: 3rd - 4th week of September 

Winemaking: The grapes at the right stage of maturity, have been harvested, crushed and de-stemmed. The juice maintains contact with the skin in steel containers for 12 hours at a temperature of 5-6 ° C. to extract only the most delicate aromatic substances and the characteristic pinkish color. This is followed by racking without pressing, resulting in about 40% yield.

Fermentation: The fermentation continues for another 13-15 days at a controlled temperature of 13-15 ° C. 

Analytical data: Total Acidity 5,60 g/l, Residual sugar 2g/l, Ph 3,45, Total SO2 85 mg/l
