Castello di Meleto - In Gaiole in Chianti since 1256

The land of Castello di Meleto extend around the medieval town for about 2,470 acres: of these 300 are reserved for growing grapes. Sangiovese is the main varietal used in the production of the Chianti Classico DOCG. Other varietals planted in the '80s include Merlot and Cabernet, but since the late 90s there has been a process of replanting aimed at enhancing the traditional heritage of grapes in Tuscany, also introducing some white varieties such as Vermentino.

Winemaking

The grapes are harvested in boxes to minimize the breakage of the berries during transport to the cellar. The non-destemmed grapes are pressed and the crushed remains in maceration for a few hours. The must is subsequently separated and cold clarified; the clearest part is then sent for fermentation in stainless steel tanks at controlled temperature up to a maximum of 17 °.

Maturation and Refinement

The refinement is carried out in steel for about 6 months.

Tasting Notes

Soft pink color, hints of strawberry, cherry, and black currant. Good freshness combined with a pleasant and soft finish.
