Bottega S.p.A. it is at the same time a winery and a distillery, which has a close-knit team of expert winemakers both in winemaking and in distillation. The headquarters is located in Bibano di Godega (TV), in the Doc Prosecco area, 50 km north of Venice. The company was founded in 1977 by Aldo Bottega, master distiller with more than thirty years of experience in the field, which he had inherited from his grandfather, an expert wine merchant during the '20s, the passion for the world of wine. At the end of the '70s the company is a small company operating in the local grappa market.
In 1983, on the death of the founder, his son Sandro, together with his brothers Barbara and Stefano, took over the company. From an artisan reality, which operated only in the world of grappa, it has transformed over the years into one of the first 20 private wineries and distilleries. In the duty free and travel retail channel it has burned down the stages and, as far as sparkling wines are concerned, has become the second brand in the world, after a well-known Champagne brand. This extra category extra virgin olive oil is produced using only and exclusively Italian olives, obtained from Organic Farming in Central Italy, by cold extraction and solely by mechanical means. After being separated from the remains of twigs and leaves by means of the sorting, the olives are weighed and stored to then be washed and sent to the milling, a mechanical action that has the purpose of breaking the cell walls to let the juice escape. In this way we obtain what is called "oil paste", an emulsion composed of oil, water and solid parts. Then proceed with the kneading which allows the oil drops to be separated from the water by mixing the dough and extracting it mechanically with a centrifuge. At the end of this operation the oil is cloudy. During its storage, the solid residue that causes the turbidity deposits on the bottom of the container and the clarified oil can be filtered and finally bottled. The precious and original ceramic bottle, used to bottle the Organic Extra Virgin Olive Oil Bottega, represents the perfect protective barrier both against oxygen and light, and allows to preserve intact the organoleptic profile of the precious liquid it contains.
