The Producers

I Contadini - "Conserva Mara"

It is one of the traditions that speaks of the Apulian grandmothers and hot summer terraces: it is a traditional sauce made up of 1/3 spicy peppers and 2/3 tomatoes, flavored with onion and cooked until it becomes creamy and thick. The sauce is then allowed to condense in the sun for days and days and is finally amalgamated and placed in glass jars with extra virgin olive oil.

Ingredients: Spicy chili, sweet pepper, extra virgin olive oil, dry tomato, onions, salt, apple vinegar, lemon juice.

Agricola San Matteo - Orecchiette di Grano Arso

One of the most typical and traditional products of the Gargano, obtained by grinding the toasted wheat. The burnt wheat pasta is a product with an ancient flavor. Born as a poor dish, prepared by farmers who harvested the grains left on the wheat fields after the stubble burns, at the end of the harvest, today it is rediscovered and matched to the most disparate flavors thanks to the porosity of the pasta, to meet the palates more demanding.

Ingredients: Durum wheat semolina, flour wheat flour, water.

The Peasants - Cime di Rapa alla Pugliese

It is a typically Salento variety of turnip, a vegetable rich in nutrients and antioxidants. Turnip greens are washed and washed by hand, blanched and finely minced with extra virgin olive oil. It is an excellent vegetable served as an appetizer or as a side dish with meat or cheese but the turnip tops are mainly used to season orecchiette, the most typical dish of Puglia.

Ingredients: Turnip greens, extra virgin olive oil, chilli pepper, garlic, apple vinegar, whole salt, lemon juice.

Peranzana olive gives rise to an elegant extra virgin olive oil that goes well with delicate dishes thanks to its very low acidity and a very balanced taste. The characteristics of the peranzana olive are dense on the nose, giving intense and lively aromas of tomato, rocket, radish and bright sensations of artichoke. In the mouth it confirms the fresh and lively olfactory notes without exceeding in bitter or spicy tones. A multisensory experience to live.

Valentina Passalacqua - Nero Di Troia Puglia I.G.P.

The Nero di Troia vine suggests its origins in Asia Minor, where the city of Troy, narrated by Homer, stood. This wine is born instead inside the Park of Gargano, in Puglia, a magical and ancestral place that plunges into the Adriatic. It has a ruby red color with violet reflections, on the palate it is warm, fruity, spicy and round. It goes well with savory first courses, cheeses and grilled meat.

Grape variety: 100% Trojan Black.
