The Art of Home Baking Since 1932
In 1932 Elena and Giovanni Fraccaro opened the Fraccaro Spumadoro bakery within the medieval walls of Castelfranco, laying the foundation of a baking tradition which was destined to become famous. Alongside its popular bread, this small bakery soon started to be known for its cakes with such great appreciation that a second bakery was opened in Borgo Pieve, just after the end of the war. The new bakery specialised in the making of fragrant focaccie, panettoni and sponge cakes (plum-cake). The key ingredient to this success was a proven and precise production method. The same principle was retained and enhanced when Fraccaro opened their dedicated cake factory:all the products are still made according to the artisan tradition, in the factory you will find the same scents and atmosphere as the original family bakery. Simplicity, authenticity and community: our cakes reflect these values, the ones we share with family and friends, their smells and taste remind you of fond memories.
New proposal with three Slow Food Presidia: the rose syrup (Liguria), produced with rose petals, water, sugar and lemon, the sea salt of the Cervia saltworks of the "Riserva Camillone" (Emilia Romagna), and the vanilla of Chinantla (Mexico). the dough is enriched with cubes of semi candied pears. Three Slow Food Presidia are used to make our panettone: Siwa Oasis dates, Mananara vanilla and Gargano citrus candied by Essenza Garganica di Rocco Afferrante in Vico del Gargano (FG). Other ingredients include, sourdough made by natural fermentation of flour and water, which the Fraccaro family has worked daily to keep alive since 1932.
On the other side the intense and embracing taste of the cream made with Grappa Riserva Villa de Varda, that joins together with the softness of the dough and a pleasant, silky and entangling taste.
On one side the Redoro organic extra virgin olive oil, delicate and rich of fruity fragrances, obtained from olives cultivated on the Venetian hills and manually harvested following the most typical tradition.
The evolution of the classic cardboard case in this new fornat conceived to be handy, as well as simple and elegant. We brought together our Panettone with nougat flakes: a combination of tastes, from almond scents to the soft honey taste in absolute harmony, without candied fruits and raisin.
The softness of the natural rose dough with fine fresh butter, the golden color and star shape, enriched with a sprinkle of powdered sugar, makes the Pandoro Fraccaro the perfect sweet to celebrate Christmas.
