Zu Plun - Distillates from The Dolomites

“It is not necessary to be crazy to distill a great liquour, but it helps immensely”. A 14th-century document already mentioned the Plunhof at Siusi allo Sciliar (Seis am Schlern). In the past, the company was part of the land properties of the Hauenstein Castle and was therefore owned by no less than poet Oswald von Wolkenstein. Yet not even his vivid fantasy might have imagined that world-class and internationally famous fine spirits and fruit liquours would be born here, 1000 metres above sea level.

Today, Zu Plun is the distillery of the Dolomites that makes gins, rhums, liquours and grappas using mountain ingredients. The Dol Gin, made with Dolomitic plants, is certainly the one that best represents this area. There are many traces of this region in this liquour. The one that is probably most suited to the current trends is the Yellow Gin, in which the juniper aroma is enriched with the essence of lemons from the Garda region. The Grenoir is made with pomegranate, and finally the Salz Gin is enriched with salt and oysters.

Our Grappa

Grappa obtained from pomaces of small winemakers with high quality standards which keep more residual moisture after they have been pressed than the mass-produced pomace of bigger wineries. That is because the damper the raw material is, the more wine fragrances will pass through the spirit.

Muscat Rose Muscat Rose à Petits Grains grappa from South Tyrol is obtained by pomace and grapes from the Vineyards nearby Caldaro and Sta. Maddalena (Plattner, Salig).

The limpid pink ruby-colored muscat is a real rarity among South Tyrolean vines; It is said that the Prince of Campofranco had it in his suitcase when he moved from Sicily to Caldaro in the mid-nineteenth century. Despite its southern origins, it is easy to find the renowned variety in the mountains of the South Tyrolean wine route. The harvests are somewhat scarce, the cultivable area is limited and the vines require a particularly warm microclimate, but the South Tyrolean winegrowers who have taken up this challenge manage in any case to obtain valuable vintages of Moscato Dolomiti or Moscato Rosa Alto Adige. The delicate, aromatic dessert wine stands out for its full aroma on the palate, sweetly spiced and, as the name suggests, an intense rose aroma. The bright color of this unique red among dessert wines is lost during the distillation of pink muscat pomace to obtain grappa, while the intense aromas of berries and floral notes are retained, reminiscent of dried rose petals.
