The Producers
Antica Larderia Mafalda - Lard and Truffle Cream
White as the marble that cradles the seasoning, once the cream of lard was prepared by beating lard in the white marble mortar of the Canaloni di Colonnata. From the processing of lard of Colonnata I.G.P. with black summer truffle, harvested on the hills between San Miniato and Volterra, in the heart of Tuscany, you get a soft cream delicately scented, soft and enveloping on the palate.
Ingredients: Italian pork lard, natural sea salt, black pepper, garlic, rosemary, mixture of spices and aromatic herbs, black truffle, aroma.
Caccia e Corte - Tuscan Crostino
In the artisan workshop of Castelfiorentino everything is done by hand and the cooking takes place in slow-fire pans with times that reach up to five hours, without the addition of preservatives, dyes and various additives. This paté lends itself well to enrich crostini and slices of bread both as an aperitif and as an appetizer.
Ingredients: Chicken livers and hearts, 100 % Italian extra virgin olive oil, onions, tomato pulp, white wine, capers, anchovies, carrots, celery, salt, black pepper.
Caccia e Corte - Pate of Pheasant at Vernaccia di S. Gimignano
For the preparation of sauces in Castelfiorentino high quality raw materials are used, all carefully selected from local suppliers of trust. Game pâté to spread on bruschetta and traditional Crostini, based on the highest quality ingredients, has a very intense flavor and is made aromatic by the use of Vernaccia wine, typical of many Tuscan recipes.

Villa Marta Florence - Cantuccini Salati
Getting to build a salty cantuccino was not easy. It has characteristics of such versatility that is very pleasant with mascarpone, but also with intense blue cheeses. The sweetness of hazelnuts and pistachios is accompanied by the intensity of salted capers and oregano. The manual processing, the choice of whole Italian quality fruits, give different sensations to each bite. The rusticity of the flour gives pleasantness in accompanying the creaminess of the cheeses. But also savory or spicy meats go very well together, perhaps together with brut bubbles or wines with a fair acidity.

Colle Bereto - "Colle B" Spumante Metodo Classico Brut Rosé
The last born of the wines of Colle Bereto: an amazing sparkling wine Metodo Classico Brut Rosé, born in the high hills of Chianti. Produced with noble Pinot Nero grapes, Colle B arrives at the disgorgement after 30 months on the lees. The elegant vineyards of the Borgo open to "book" on the axis of the valley bottom with orientation to the south-west and enjoy an ideal exposure and altitude excursion, between 450 and 500 meters above sea level. The soil, characterized by Galestro, Alberentino and an important rocky substratum, is ideal terrain for the production of excellent Sangiovesi, as well as other varieties among which stand out Pinot Nero and Merlot, vines perfectly at home in this territory.
