Who I Am
Hello Everyone!
My name is Alessio Brusadin from Pordenone, Friuli, professional chef and globetrotter . After the hotel school, I worked for some years in Pordenone and once completed the National service, I left for London.
There I worked in 5 star establishments such as the Hyde Park Hotel, The Halkin Hotel (under the guidance of Gualtiero Marchesi) and The Metropolitan Hotel, until I opened my own chain of Italian restaurants one of which, Grano in Kew Bridge, won the award for “Best Italian Restaurant of the Year” in 2000.
After fifteen years abroad, I returned home and settled in Caldaro, immersed in the beautiful hills of South Tyrol, where I opened with my partner Vito Leone the Restaurant Ritterhof . I than moved to the next valley where with the Corrà brothers I started this incredible adventure.
The return to Italy was a rediscovery of wonderful flavors and products. The aim is to source the best ingredients, capturing the essence of their flavours, add a bit of skills and creativity and, without adding any preservatives, make them available for the pleasure of you all.

The Classic Jams
Jams made with only one fruit and adding only sugar and lemon juice. All classic flavors, but with aromas and textures from tradition. Produced in shallow and wide pots 2,5 kg at the time, to facilitate evaporationfor . All to enhance aromas and colors. Available in individual pots or in tasting selection or elegant gift boxes. Ideal for breakfast on toast or for pies and cakes or simply on natural yoghurt with cereals. They are completely natural with no preservatives, colorants or gelling.View all tastes available.
The Special Jams
Specials are jams with unique recipes and with original and delicious combinations. In this category I go in search of little used and unique ingredients such as Gewurztraminer grapes, elderberries, pairings with wines. I create these preserves as if I was creating a dish. For special breackfast and afternoon teas, unique gifts in the beautiful wooden boxes marked in focus. View all tastes available.
The Citrus Marmelades
For marmalades I use only natural oranges (Sicily and Calabria), Mandarin (Sicily), natural Grapefruits (Calabria) and femminello Siracusano lemon (Sicily), All untreated fruit.Here I made both classic combinations and original ones. One thing common to all : the scent!
The Chocolate Jams
The chocolate jams are jams, some mashed, other with pieces with the addition of chocolate at the end. They are greedy and perfect for afternoon snacks for children and not. They are, like all my products completely natural without preservatives or colorings. I combined them with pancakes, whaffle, muffins and pies but also spread on a slice of toasted bread.
The Chutneys
The chutneys are sweet and sour made with fruit and vegetables, with brown sugar and apples vinegar. They are perfect to pair with cheeses salami, boiled or grilled meats. In this category I put the sweet chilli sauce, sugar based sauce, vinegar, chili and garlic, delicious of any kind of fried or for delicious wok vegetables.
The Meat Ragù
My sauce are made with selected meats are reared naturally, grazing, or wild. Made with only one kind of meat are all 100% and are entirely free of preservatives. They are made with traditional recipes and slow and long cooking to exalt scents and flavors. All the flavor of a top restaurant sauce in the convenience of a vase.
