Pasta d'Alba was born in the heart of the Langhe, thanks to an intuition of its founder Dario Mainardi and his wife Rosangela, naturopath: to create a family-run organic pasta factory where quality, tradition and innovation meet.


Pasta d'Alba is an artisan pasta factory with ICEA Organic Certification since 2006.

Always, this is our strong point: we work with fresh flours, often ground to stone from certified organic agriculture, sometimes biodynamic, including Italian grains, wholemeal flours, ancient cereals, gluten-free flours and legumes 100%.


The choice of raw materials is never left to chance, but is the result of careful and constant selection work.


We Work


Carefully crafted and in full respect of tradition.



In our laboratory, tagliolini and tagliatelle are nested by hand, as per tradition. The short pasta such as penne, fusilli, maccheroni is drawn to the bronze giving it the perfect roughness typical of artisanal products, making it perfect for collecting sauces. Afterwards, the dough is dried slowly at low temperatures for at least twenty hours.


Drying is the fundamental process for the conservation of our products and the slow and low temperature process allows us to preserve and preserve the taste and quality of raw materials. The result is a healthy and rich product.


Even packaging is not left to chance: an essential packaging inside a transparent bag, lets the product speak, while at the same time preserving its freshness to the fullest.

We believe in a natural diet and an agriculture that does not consider the earth our property, but a precious commodity to live in prosperity and abundance with conscience and gratitude and to preserve with a sense of responsibility.


In the family we have always shared the love for organic food and healthy eating and the birth of our three children Marco, Luisa and Laura, was the right push to realize this our project.


The constant search for a fresh and quality raw material and, consequently, the excellence of our products, are what distinguishes us.


The direct contact with the customers, the flexibility of the organizational structure and the continuous desire for improvement represent our extra gear.


Dario, with his great dexterity, closely follows the production every day: it is from his creative flair and his ability that have come to life all the products you find on our catalog, from the most classic to the absolutely new ones. / p>


Rosangela, thanks to her studies in the field of natural food and the constant search for novelties, has conceived and followed the birth of products up from the most classic recipes to the most recent line of 100% gluten-free products; this is why a special certified factory for gluten-free products has been inaugurated.


And so the staff grows: Luisa with kindness and courtesy deals with sales and customer relations; Marco of marketing and commercial relations with foreign countries; Laura, the youngest, takes care of social media and cooking recipes, while completing her studies in the food sector.


The Laboratory


In the heart of the Langhe, a land of ancient traditions.



Our office is in Diano d'Alba and hosts two separate production laboratories: the first in which we work all the classic and local flours of the artisanal line and some typical recipes of the territory.


The second, with ministerial authorization, in which we produce and package all our certified gluten-free products.


Our Structure


It allows us to have a wide distribution.



Our adventure began in 2006 and, year after year, production grew rapidly and steadily, confirming the quality of the product and the efficient management of the relationship with customers.


Pasta d'Alba is aimed at distributors, shops or individuals, interfacing directly with the customer: this allows us to have a lean and efficient commercial structure.


We are also in wheat to customize the product according to your requests.


With some buying groups, in addition to simple sales, we have also undertaken a closer collaboration by transforming their flours and delivering the finished product, thus creating supply products and products based on microalgae such as spirulina.


Organic Certification, Vegan and Gluten Free



The flexibility of our production structure also makes us an excellent partner to develop branded products for the European and international certifiable bio, gluten and vegan markets.



Our Pasta



We use only organic flour for our pasta. Certified gluten-free products, made with high quality organic flour. And nothing else.


It is our goal to produce simple and healthy ingredients: flour and water are the main ones. The quality of the raw material is fundamental, so we only use flours from certified organic farming.



For our range of local cereals and ancient grains, we prefer our products.


Exactly as we have always done for our wheat pastes, also for the Gluten Free Line, we select the best suppliers and we produce with the addition of water different recipes to satisfy intolerant customers, celiacs and for those who follow particular diets.


Our Strength is to Make a Quality and Good Product


"Dry but fresh" is our motto: this means that the process from milling to processing to final consumption is very quick.



Flours are processed immediately after milling; the drying process is slow and at low temperature for at least 20 hours.


This allows us to keep the properties of cereals and taste as unaltered as possible, with the intention and the will to offer our customers a healthy, light and digestible pasta, to be brought to the tables of all day! 


Where Our Flours Come From



Many of the cereals and raw materials we use come from the hills that surround us: the Langhe, a fertile land and a UNESCO World Heritage Site. Here, many farmers cultivate with passion, according to classical methods and respectful of Nature.


If not the area, the raw materials we transform are Italian and not only, but always controlled and come from certified organic crops. Many of the cereals come also from biodynamic cultivations, and for this reason we have also obtained Demeter certification from 2017.


Our Choices - Are for the Old Grains



For many productions we have chosen to use Senatore Cappelli durum wheat semolina, an ancient variety; more and more we try to use for our productions varieties of grains remained authentic, which has not undergone any genetic manipulation by man.


These varieties, ground with stone, have a more intense taste; Moreover, containing a smaller quantity of gluten, they are also lighter and more digestible.


All our products come from certified organic farming. Raw material of great quality and value is what makes the product unique. Bronze processing and slow drying at low temperature.
