The Pantry of Alessio Brusadin
Hello Everyone! My name is Alessio Brusadin from Pordenone, Friuli, professional chef and globetrotter . After the hotel school, I worked for some years in Pordenone and once completed the National service, I left for London. There I worked in 5 star establishments such as the Hyde Park Hotel, The Halkin Hotel (under the guidance of Gualtiero Marchesi) and The Metropolitan Hotel, until I opened my own chain of Italian restaurants one of which, Grano in Kew Bridge, won the award for “Best Italian Restaurant of the Year” in 2000. After fifteen years abroad, I returned home and settled in Caldaro, immersed in the beautiful hills of South Tyrol, where I opened with my partner Vito Leone the Restaurant Ritterhof . I than moved to the next valley where with the Corrà brothers I started this incredible adventure. The return to Italy was a rediscovery of wonderful flavors and products. The aim is to source the best ingredients, capturing the essence of their flavours, add a bit of skills and creativity and, without adding any preservatives, make them available for the pleasure of you all.
Very special jam with plums, pears, quinces and Bas armagnac. Delicate and with a unique texture. Dedicated to my eldest son Edoardo, very fond of plums. Excellent for breakfasts and snacks, special pies, but also perfect as a garnish for cheeses and cold cuts.
Another taste of the "limited edition" series. This dedicated to my beautiful wife Gessica. Delicate jam, very fragrant and with that slightly bitter aftertaste of licorice.
Jams made with only one fruit and adding only sugar and lemon juice.
Delicate, elegant and thanks to the almonds is also crunchy, delicious on cakes in general and with a slice of toasted white bread for an afternoon tea. Product made in collaboration with Lamole Lamole Winery in Gaiole in Chianti (Siena).
Delicious on toast or tarts, but also in combination with seasoned or blue cheeses.
To the strawberry I added the elderberries for a particular jam, typical from Alto Adige. Excellent on tarts or cookies.
The sweetness of strawberries, the texture of banana and the beneficial properties of goji berries. Very delicate.
Pure elegance derived from the blueberry but above all from the pinot noir wine from the Kettmeir cellars of Caldaro on the wine route. Excellent on bread but also in combination with soft cheeses and goats.
To the black berries I added lemon cooked on a seperate pan, seeded and cut in julienne and put it in the main jam with fresh mint.
Very delicate taste and smell, for a special brakfast and afternoon tea. Very good also with mature or blue cheese.
An exotic jam with incredible scents. Guava from Brazil and Lychees from Madagascar. Close your eyes and you will feel like you are in the tropics!
The yellow peaches of Romagna with the sweetest papaya of Brazil. Everything with the lemongrass oriental scent (citronella).
Here I paired the scent of white peach of Romagna with the most typical of white wines from Alto Adige. Another product done in cooperation with the winery Kettmeir in Caldaro.
Variant of my raspberry jam without seeds making it super smooth, creamy and enhances the taste of raspberry. With cherries and candid ginger. Perfect for biscuits or on the natural jogurth.
These apples are very difficult to find but delicious. I stir them with the rhubarb and added the currants slightly dried in the oven so it doesn't melt in jam. Result a delight for tarts and shortbread cookies!
Delicious bar of white chocolate flavored with Amarelli licorice powder, garnished with dehydrated raspberries and candied lemon derived from our raspberry, lemon and licorice jam. Produced in collaboration with Adelia de Fant in her laboratory in San Daniele.

Delicious rum-flavored milk chocolate bar garnished with candied oranges and dried fruit derived from our "Il Sole d'Inverno" jam.
Finally arrived !! An incredible spread of hazelnuts with no added fat and completely natural. Delicious for snacks, pies or stuffing of muffins or pancakes. Absolutely unmissable. Produced in collaboration with ciocomiti, chocolate artisans and our great friends.
