History

The first relevant evidence of straw wine produced in Chianti Classico dates back to 1439, year in which a Council was held in Florence between Catholic and Orthodox bishops, during it was served a sweet wine that surprised all the attendees for elegance and intensity. At this episode is bond one of the theories on the origin of the name "Holy Wine" (in Italian "Vinsanto"): indeed some believe that during the Council it was compared to the already famous and appreciated sweet wine of the Greek island of Xantos, and in other interpretation the name "santo" is linked to the adjective "xantos" (yellow) used to describe the best straw wines of that age, without forgetting the assonance with the "Holy" wine served during the Saint Mass. More intuitive is the hypothesis of the origin of the name "Occhio di Pernice" ( Partridge's Eye) since linked to the color of the wine. Starting from the second half of the Eighteenth Century we found numerous mentions of the Vin Santo as official denomination, recognized in the first documents thanks to the Consortium of Vino Chianti Classico since its foundation in 1924, confirmed by the following decree of 1932. The Vin Santo of Chianti Classico was awarded with the DOC label in 1995.

Production Method

The grapes coming from old vines located between 400/500 mt. a.s.l. are accurately selected, favoring healthy and intact bunches harvested during the entire harvesting period. The harvested bunches are hanged up on iron threads or put on wickers for natural drying in the "Vinsantaia" (specific type of cellar), which is subject to temperature leap and ventilation in order to avoid the creation of mildew; the drying is prolonged till December. After the delicate pressing phase the must, particularly concentrated of sugars, is fermented in the typical small barrels called “caratelli”. The alcoholic fermentation is long and slow, and it is needed to reach the maximum alcoholic grade of 16% and the complexity of the aromas that characterize this wine. The aging in the "caratelli" happens for 5 years circa, with refinement in bottle for 6 months circa.

Culinary Pairings

Perfect at the end of a meal end accompanied by dry pastry, cantuccini and typical sweets from Siena as Panforte and Ricciarelli. To be tried also with herb and half/seasoned cheeses and with toast of Tuscan liver and fois gras. A sweet versatile wine, both for meditation than served fresh as it happens for Spanish Sherry and Tapas. Serve at a temperature of 14 / 16 °C in small wine glasses with a tulip form.
