40% Syrah, 40% Merlot, 20% Sangiovese
Winemaking
The grape is picked and sorted manually and after being destemmed and softly pressed, it is sent to vats for vinificaiton. Each variety is vinified separately. Maceration on the skins is carried out for 22 days at a controlled temperature of 27 °C in stainless steel vats. Alcoholic fermentation lasts an average of 10 days. Immediately after the racking the must is poured in new Allier oak tonneaux; at the first transfer that takes place after the malolactic fermentation, around the month of November, the assemblages of vines are made. The ripening in tonneaux lasts 16 months; after this period, it is filtered and bottled. Noir remains in the cellar for another six months for the latest aging in the bottle before being placed on the market.
